1 very ripe ogen or cantaloupe melon peeled and seeded
1/4 pint fruity white wine (such as riesling)
1/3 pint buttermilk
2 tbsp lime juice
l/2in fresh ginger grated
In a food processor blend the melon until it is a smooth puree add the wine buttermilk and lime juice and process again.
Pour into four bowls and garnish with ginger.
For a sweeter soup perhaps for a pudding substitute crystallised ginger for raw and add 4 tbsp of melon cubes.
Serves 4Avocado and goats cheese toast
1 ripe avocado mashed
4oz soft goats cheese
2 spring onions finely sliced
1 tbsp chopped dill
1 tbsp lemon juice
1 tbsp extra virgin olive oil
salt and black pepper
Combine the first six ingredients to a rough paste.
Season with salt and plenty of black pepper and dollop on to crackers crostini toast or
biscuits.
Serves 4
