lemon poppy seed cake
100g blue poppy seeds
2 lemons grated zest and juice
250m1 milk
250g soft margarine
250g caster sugar
300g self raising flour
2 tsp baking powder
1 tsp bicarbonate of soda
4 large eggs separated
2 tbsp caster sugar

large roasting tin lined on third set of runners in roasting ovenwith cold shelf on second set of runners OR second set of runners in baking ovenof four ovenaga
Place the poppy seeds in a pan with the grated lemon zest the juice of one lemon and the milk.
Heat on the simmering plate for 3 to 4 minutes then leave until required.
This will slightly soften the seeds they will still have a nutty taste but the texture will not he quite so firm.
Dont worry if the milk appears to curdle.
cream together all the remaining ingredients except the egg whites then add the poppy seed mixture.
Whisk the egg whites until stiff then fold them into the mixture and spoon immediately into the prepared tin.
Bake for 30 minutes until set.
Blend the extra caster sugar with the juice of the remaining lemon then drizzle the mixture over the cake as soon as it is cooked.
Carefully lift the cake on to a wire cooling rack and leave until cold before cutting into squares.
A light natty cake with a tang of fresh lemwn.
Makes about 18 pieces
