Rum Cream Pie
A great refreshing pie especially for the men in your life.
Ingredients:
2 – 8 inch baked pie crusts- pastry, graham, or chocolate wafer
6 egg yolks
1 cup white sugar
1 tablespoon unflavored gelatin
1/2 cup cold water
2 cups whipping cream
1/2 cup rum
semisweet chocolate, shredded
Directions:

Beat the egg yolks with the sugar until light and fluffy.

In a saucepan, soak gelatin in water. Bring to a boil. Stir slowly into egg
mixture.

Whip the cream to peaks, and add rum. Fold into egg mixture. Pour
filling into cooled pie shells. Sprinkle with shredded chocolate. Serve
after chilling for several hours.
