for the pastry

200g self raising flour sifted

2 tbspns olive oil

1 tbspn melted butter

85g plain thick low fat yoghurt

1 tspn vegetable oil to grease tin

1 egg yolk lightly beaten to glaze

for the filling

150g feta chesse crumbled with a fork

1 large egg lightly beaten

2 tbspns finely chopped dill or mint

1 spring onion finely chopped

freshly ground black pepper

Put the pastry ingredients into a bowl and mix with your hands.

Add a little more flour if the mixture is too wet.

Cover and rest in the refrigerator for 15 minutes.

Preheat the oven to 190C/375F/gas 5 and grease a baking sheet with the vegetable oil.

In another bowl combine the filling ingredients.

On a lightly floured surface roll out onethird of the pastry not too thinly.

Using a glass or pastry cutter cut out 8cm circles.

Place a teaspoon of filling along the middle of each pastry disc then fold it over to make a small half moon shape. Press the edges together to seal them.

Place the pies on the baking sheet.

Continue with the remaining pastry and filling until they are all used up.

Brush the tops with egg yolk and bake for 20 minutes until golden.

Serve hot or cold.

These little cheese pies used to be made for us by an Athenian friend called Eleftheria meaning liberty Hence their name. Cold the pies are ideal for picnics.
