orange date and cardamom tart

4 large eggs

180g caster sugar

the zest of 2 oranges

120ml strained orange juice

the seeds from 4 green cardamom pods ground

150ml single cream

1 x 24cm sweet pastry case baked blind

18 fresh dates halved and pitted

Whisk the eggs and sugar until pale and creamy. Stir in the orange zest juice cardamom and cream then refrigerate overnight.

Strain the egg mixture through a fine meshed sieve and discard the solids.

Place the pastry case (in its tin) on a baking tray arrange the dates on top and pour in the egg mixture.

Bake for 30 minutes at 160C/325F/Gas Mark 3 until set.

Cool for 3 hours before removing from tin.

Serves 4
