l00g plain flour

100g medium oatmeal

1 level tsp bicarbonate of soda

1 level tsp ground ginger

50g margarine

l00g soft brown sugar

l00g treacle or syrup or mixed

1 egg

3 tbsp milk

Line the small roasting tin with bake o glide or baking parchment.

In a mixing bowl put the margarine sugar and treacle or syrup.

Stand bowl on the aga until the fat is melted and the sugar mixes in well.

Sieve the flour bicarbonate of soda and ginger together into a mixing bowl.

Stir in the oatmeal.

Beat together the egg and milk.

When the syrup mixture is melted together pour into the flour.

Beat in the egg and milk to make a smooth batter.

Pour into the prepared tin.

For the two oven aga hang the roasting tin on the bottom set of runners of the roasting oven.

Slide in the cold shelf two runners above. For the four oven aga bake in the baking oven on the bottom set of runners.

Bake for 25 to 30 minutes until risen slightly shrunk from the sides of the tin and is firm to the touch in the middle.

Cool in the tin before cutting into squares.

A variation on the gingerbread theme this is ideal for Bonfire Night warm and spicy. Like gingerbread this improves with keeping in a tin for about a week.
