150g glace cherries

150g dried figs

150g apricots

150g dates

150g raisins

150g sultanas

50g mixed peel chopped

175ml dark rum

175g skinned roasted hazelnuts

225g butter softened

grated rind of 1 lemon

225g soft dark brown sugar

4 eggs beaten

2 tbsp black treacle

225g plain white flour

10ml ground mixed spice

To finish:

3 tbsp apricot jam warmed and sieved

450g white almond paste

450g readytoroll fondant icing

Grease and line a deep 200mm round cake tin with a double thickness of greaseproof paper.

Rinse the glace cherries under cold water to remove all the syrup; drain and dry on kitchen paper.

Very roughly chop the cherries figs apricots and dates.

Put all the fruit and the peel in a bowl. Pour on two thirds of the dark rum and leave to soak.

Finely grind 50g of the hazelnuts in a blender or food processor; roughly chop the remainder.

In a large mixing bowl beat the butter with the lemon rind until soft and pale. Gradually beat in the sugar until well mixed.

Slowly beat the eggs into the creamed ingredients.

Add the treacle beating again until evenly blended.

Sift the flour and spice together and fold halt into the creamed mixture with the ground and chopped hazelnuts.

Gently fold in all of the fruit followed by the remaining flour.

Spoon into the prepared cake tin then level off the surface.

Tie a band of brown paper around the outside of the tin.

Brush a little cold water on top of the cake.
