apple and cheese cake
575g dessert apples
175g self raising white flour
1 tsp baking powder
75g light muscovado sugar
50g raisins
50g sultanas
50g brazil nuts roughly chopped
2 eggs
90ml sunflower oil
225g caerphilly or wensleydale cheese
To finish:
icing sugar for sprinkling
Grease and baseline a 50mm deep 230mm round loosebased flan tin.
Peel core and thinly slice the apples.
Sift the flour and baking powder into a bowl.
Stir in the sugar raisins sultanas nuts and apples and mix until evenly combined.
Beat the eggs with the oil and add to the dry ingredients.
Stir until evenly incorporated
Turn half the mixture into the prepared cake tin and level the surface.
Crumble the cheese over the surface then spoon on the remaining cake mixture. Spread the mixture to the edges of the tin but do not smooth; a rough surface gives a more interesting finish.
