green tomato chutney

1.8kg green tomatoes roughly chopped

1lb 448g cooking apples peeled cored and chopped

448g onions peeled and chopped

224g raisins

1 tbspsalt

1 tbsppickling spice

1pt500ml vinegar

448g Demerara sugar

Method

1 Place the tomatoes apples onions raisins and salt into a large pan

2 Tie the pickling spice in a muslin bag and add to the pan

3 Add half of the vinegar and bring to the boil simmer until the mixture is thick (about 3/41 hour)

4 Dissolve the sugar in the remaining vinegar and add to the cllutncy

5 Simmer for 1 hour or until the chutney is thick stirring frequently

6 Remove muslin bag. Allow chutney to cool slightly

7 Spoon into prepared jars seal and label

Makes:2.7kg
