french onion soup

25g butter

1 large onion peeled and thinly sliced

1 level tbsp plain flour

600ml chicken stock hot

coarsely grated parmesan to serve

Heat the butter in a pan then add the onion.

Stir cover and cook over a low heat for 15 minutes.

Increase the heat to medium and cook uncovered for about 10 minutes stirring frequently until golden brown.

Add the flour and cook for 1 minute stirring constantly then stir in the hot stock.

Cover and simmer for about 10 minutes then season to taste.

Serve hot sprinkled with grated parmesan.

For a more substantial dish butter a thick slice of baguette cover with grated gruyere and bake at 180C1350F/Gas Mark 4 until the bread is crisp and the cheese melted. Float one slice on top of each bowl of soup.
