chocolate cake

150g selfraising (lour

25g cocoa

175g butter

175g soft brown sugar

1 tsp vanilla essence

100g plain chocolate melted

3 tbsp boiling water

4 large eggs

filling and covering:

300m1 double cream

275g plain chocolate chocolates or flake to decorate

Baseline 2 x 240mm cake tins.

Sieve the flour and cocoa together.

Cream together the butter and sugar.

Beat in the melted chocolate mixed with the water.

Separate the eggs and beat the yolks into the creamed mixture folding in a little flour with each yolk.

Fold in the remaining flour.

Whisk the egg whites until stiff but not dry and carefully fold into the cake mixture.

Divide the mixture between the tins.

To bake put the oven shelf on the floor of the roasting oven put in the cakes and slide in the cold shelf two runners above. For the four oven aga put the shelf on the bottom set of runners in the baking oven. Put the cakes in the oven.

Bake for 25 to 30 minutes until risen springy and slightly shrunk from the sides of the tin.

Turn onto a wire rack and cool.

For the covering put the chocolate in a bowl to melt on top of the aga.

Pour the cream into a small saucepan place on the simmering plate and bring to the boil. Pour onto the chocolate and leave to stand off the aga for 5 minutes. Whisk until cold and smooth.

Use to fill the cake sandwich together and use the remaining mixture to cover the top.


A special occasion cake that decorated with chocolate flakes and truffles can look a smart centrepiece for the tea table. Tie a brown tartan ribbon round to make it extra special.
