chicory and chestnuts with citrus oil
3 heads of chicory trimmed and sliced lengthways
250g pack pre cooked and peeled chestnuts (available vac packed) sliced
30g butter
salt and pepper
6 tbsp orange citrus oil
1 tbsp balsamic vinegar
Divide the shredded chicory leaves between six serving plates.
Flashfry the sliced chestnuts in
the butter and distribute over the leaves. Whisk together the citrus oil with the balsamic and dress each plate.
Season and serve.
