steak kidney and mushroom pudding
700h chuck steak cut into 20mm dice
225g lambs kidneys cut into 20mm dice
125g mushrooms chopped
1 tbsp mushroom soy sauce or 1 tspn worcestershire
salt and freshly ground black pepper
150m1 water
selection of freshly cooked vegetables and creamy mashed potato to serve
Suet crust pastry:
225g plain flour
2 tsp baking powder
125g shredded suet
1/2 tsp salt
cold water to mix
Mix the steak and kidneys with the mushrooms onion soy sauce and plenty of seasoning but do not add the water.
Blend the flour baking powder salt and suet together then mix with enough cold water to make a soft but manageable dough the pastry should be soft but not too sticky.
Knead lightly on a floured surface then roll out twothirds into a large circle and use to line a greased 1 litre pudding basin.
Pack the meat into the pastry then add sufficient water to come almost to the top of the meat but do not allow it to overflow.
Roll out the remaining pastry to a circle just large enough to cover the meat. Damp the edges of the pastry and seal them together pinching the crust into an attractive edging.
Make a small slit in the pastry lid with a sharp knife to allow the steam to escape during cooking.
Lay a sheet of greased greaseproof paper on top of a piece of foil and fold them together to form a pleat.
Tie them securely over the pudding with string with the foil on the outside.
Place the pudding in a suitable pan adding sufficient boiling water to come half way up the pudding basin.
Bring quickly to the boil then cover the pan and place it on the floor of the roasting ovenfor 30 minutes.
Transfer to the floor of the simmering ovenand cook for at least 6 hours and preferably 78 hours.
Serve in generous slices with freshly cooked vegetables and creamy mash.
The biggest problem with steaming puddings on a conventional cooker is the amount of condensation produced in the kitchen. No such problems exist when cooking in the simmering ovenof an aga.
