spaghetti with cream sauce

350g wholewheat spaghetti

salt

50g butter

175g button mushrooms sliced

3 tablespoons chopped fresh herbs (basil chervil marjoram parsley)

freshly ground black pepper

300ml double cream

2 egg yolks

100g double Gloucester cheese grated

Cook the spaghetti in boiling water for 1213 minutes or according to the directions on the packet until it is just tender.

Melt the butter and gently fry the mushrooms over moderate heat for 4 minutes.

Stir in 2 tablespoons of the herbs add salt and pepper and cook for a further minute.

In a separate pan gently heat the cream without allowing it to boil.

Beat in the egg yolks stir in the cheese and add salt and pepper.

Remove from the heat.

Drain the spaghetti return it to the pan and toss it with the mushroom mixture.

Turn the pasta into a warmed serving dish and pour on the cream and cheese sauce.

Sprinkle with the reserved herbs if using.

Serve at once.

Serves 4
