168g margarine
168g caster sugar
224g plain flour
1 tspbaking powder
1 tspmixed spice
3 tbspmilk
168g currants
224g sultanas
56g glace cherries chopped
56g mixed peel chopped
168g marzipan
Finish
280g marzipan
2tbspapricot jam
1beaten egg
Method
l Cream margarine and sugar together until light and fluffy
2 Add eggs one at a time beating well after each addition
3 Fold in the sieved flour baking powder and spice
4 Stir in milk and fruit mix well
5 Place half the cake mixture into greased and lined 7in/178mm cake tin
6 Roll out marzipan into a circle to fit the tin size. Place on top of cake mixture
7 Spoon rest of cake mixture onto the marzipan and smooth top of mixture
8 Bake in preheated oven
9 When cooked allow cake to cool in the tin for 15 minutes before removing
10 When completely cold roll out 60z (I(8g) marzipan into a 7in ( 17Xmm) circle brush top of cake with warmed apricot jam and place marzipan on top
11 Using remaining marzipan make 12 small balls and place around the edge of marzipan
12 Brush marzipan with beaten egg and place under a hot grill until pale gold in colour
