poached apricots
350g sugar
1 lemon
2 vanilla pods split in half
2436 dried apricots soaked overnight in cold water and drained
55g chilled unsalted butter diced
mascarpone cheese to serve
Gently heat the sugar with 600ml water stirring until the sugar dissolves.
Pare the zest from the lemon and cut into thin strips then squeeze the juice and add with the zest to the pan.
Bring to a rapid boil for 1 minute then remove from heat.
Stir in the vanilla pods then the apricots bring to the boil reduce heat and simmer for 5 minutes.
Strain through a sieve into a clean pan setting aside the apricots and vanilla pods.
Bring the syrup back to the boil for 2 minutes until slightly thickened.
Increase the heat and gradually whisk in the butter.
Dont let the syrup get too thick add a little water if necessary.
Arrange 69 apricots on each plate topping with a piece of vanilla pod.
Spoon over the syrup and serve warm with mascarpone.
Serves 4
