Parmesan Shrimp with Basil Dressing

12 ounces uncooked jumbo shrimp

1/2 cup grated Parmesan cheese

1/4 cup (1/2 stick) butter

1/4 cup olive oil

romaine lettuce

cherry tomatoes

lemon wedges

BASIL DRESSING

1/3 cup olive oil

1 tablespoon white wine vinegar

1/2 teaspoon sugar

1/4 cup finely chopped basil

1 tablespoon grated Parmesan cheese

Shell shrimp, leaving tails intact. Remove back vein, flatten with rolling

pin. Toss shrimp in Parmesan cheese. Heat butter and oil in pan, add shrimp,

cook quickly on both sides until light golden brown. Do not overcook or

shrimp will toughen. Drain on paper towels immediately. Serve with romaine

lettuce, cherry tomatoes, and lemon wedges. Top with Basil Dressing.

For Basil Dressing: Combine olive oil, vinegar, sugar, basil, and Parmesan

cheese; mix well.

Beef Tenderloin on Mustard Croutons

2 thick beef tenderloin steaks

2 bacon strips, partially cooked

2 slices bread

2 teaspoons butter

1 teaspoon whole-grain mustard

oil for frying

MUSHROOM FILLING

1 tablespoon butter

4 green onions, chopped

3/4 cup chopped mushrooms

1 clove garlic, crushed

2 tablespoons stale bread crumbs

1 teaspoon grated lemon rind

Cut a pocket in the side of each steak, fill with Mushroom Filling. Wrap

each steak in bacon, secure with toothpick. Spread bread with combined

butter and mustard, toast on oven tray in 375
