oyster soup
350ml single cream
12 large oysters opened with juice reserved
a splash of Tabasco
30g butter
hot buttered toast
Mix the cream with the liquor from the oysters.
Bring to the boil then drop in the oysters.
Simmer until their edges curl.
Shake in a little Tabasco not much and stir in the butter.
Pour the hot soup into bowls and serve with the toast.
Serves 2
