meatloaf

1 large onion chopped

2 cloves of garlic chopped

15g butter

1 tbsp oil

30g soft white breaderumbs

675 g minced meat

340g bestquality sausagemeat

2 eggs lightly beaten

2 tbsp chopped parsley

1 tsp dried thyme

Salt and pepper

Fry the onion and garlic gently in the butter and oil until tender.

Scrape into a mixing bowl.

Add the remaining ingredients and mix thoroughly.

Quickly fry a small knob of the mixture to test the seasoning and adjust accordingly.

Pack the mixture into a buttered loaf tin or terrine smooth down then bang hard on the work surface to expel any trapped air bubbles.

Bake at 180C (350F gas mark 4) for 11/2 hours until done.

To test pierce the centre with a skewer: the juices should run clear.

If they are at all pink return to the oven for a little longer.

Serve hot or cold.

Sophies notes:

Meatloaf is lovely straight from the oven (make a tomato sauce to serve with it) though it tends to crumble when sliced. Cold leftovers are every bit as good and will slicemore neatly. Serve with chutney and a salad or in sandwiches.
