sweet and sour cucumber salad
1 pint rice vinegar
4 oz of caster sugar
1 cucumber seeded and sliced
3 carrots grated
1 red onion finely sliced
3 red chillies sliced
salt
2tsp salted peanuts chopped
Boil vinegar with sugar and reduce to a thin syrup over a fierce heat for about seven minutes.
Cool.
Add cucumber carrots onion and chillies and combine.
Salt to taste.
Sprinkle with peanuts.
