potato galette

4 large potatoes peeled

1L clarified butter

Salt and pepper

Using a 2.5cm diameter pastry cutter cut out a cylinder from the centre of each potato.

Slice the cylinder into discs about 3 mm thick.

Place these in bowl of the clarified butter over a pan of simmering water until just cooked.

Drain. (The butter can be used several more times.)

Place the discs in an overlapping petal formation in 6cm non stick galette moulds.

Sprinkle with salt and pepper and brush with a little butter.

Cook on a griddle until golden then unmould.

Serves 4
