115g strong white flour

115g wholemeal flour

1 tspn salt

1 tspns easy blend yeast

150ml warm water

1 tbpsn olive oil

For pizza margherita

2 tbspns olive oil

550g ripe tomatoes trimmed and sliced in thick wedges or 400g canned tomatoes drained

1 tpsn dried oregano

1 tpsn dried thyme

150g mozzarella cheese coarsely grated

2 tbpsns grated parmesan cheese

salt and freshly ground black pepper

For pizza napoletana

550g ripe tomatoes trimmed and sliced in thick wedges or 400g canned tomatoes drained

1 tpsn dried oregano

1 tpsn dried thyme

few torn basil leaves

6 anchovy fillets cut into pieces

1 tbspn olive oil

10 small black olives

Put the flours in a bowl and mix in salt and yeast.

Add the water and oil and mix with a knife to a soft dough.

Knead for 5 minutes on a floured surface.

Cover and leave 5 minutes.

Knead the dough again on a floured surface for 34 minutes until soft and elastic.

With the use of a rolling pin and by pulling and stretching by hand shape the dough into either a large oblong shape or a 28cm round.

It should be very thin about 5mm and with a slightly raised rim.

Place the dough on an oiled baking sheet cover and leave to rise for 30 minutes in the kitchen. Preheat the oven to 230C/450F/gas 8 at least 20 minutes ahead of cooking.

If you have a baking stone place it in the upper shelf of the oven and preheat it too.

Add any favourite topping just before the pizza is to be baked otherwise it will become soggy.

To make Pizza Margherita

Heat the oil in a frying pan add the tomatoes and turn with a spatula for 23 minutes over moderate heat.

Add herbs and salt and cook for 56 minutes more stirring occasionally until fresh tomatoes look wilted and most of the liquid has evapourated.

Lift the tomatoes out with a slotted spoon leaving excess juices behind and spread evenly over the pizza.

Sprinkle Mozzarella on top followed by Parmesan.

TO make Pizza Napoletana:

Prepare the tomatoes as above and spread them evenly on the dough.

Sprinkle over the basil and then add the anchovy.

Sprinkle the olive oil on top and scatter over the black olives.

Bake either pizza for Is minutes on the upper shelf of the oven placing it directly on the stone if you are using one until the dough appears crisp and golden.

Traditionally pizza is baked on a brick or stone surface in a wood fired oven so the dough becomes crisp with the intense heat. The best alternative is to use a baking stone.
