Type: Peppys Barbecue Chicken with Jamaican Fried Dumplings Free Cooking Recipe – Barbecue

Ingredients / Directions
Preparation – 15 minutes
cook time – 15 minutes

4 tbsp tomato ketchup
Juice of 1 large lemon
2 tbsp soy sauce
1 tbsp dark brown sugar
1/2 teaspoon ground allspice(Jamaican pepper)
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
4 skinless
boneless chicken breast halves

For the fried dumplings:
1 3/4 cup(s)s all-purpose flour
1 teaspoon baking powder
1/2 teaspoon dried thyme
2 tbsp finely chopped parsley
1/2 teaspoon salt
3/4 cup(s) milk In a large bowl
mix together the ketchup
lemon juice
soy sauce
sugar
allspice
cayenne
and salt.
Add the chicken breasts
stirring to coat in the marinade
then cover and set aside for 20 minutes or so.
Meanwhile
make the dumplings: mix together the flour
baking powder
herbs
and salt. Beat in the milk to make a thick batter.
Heat 2 inch of oil in a wok or deep frying pan-the oil should be hot enough so that when a cube of bread is added to the pan it browns in about 1 1/2 minutes.
Cook spoonfuls of the mixture
in batches
for 3-4 minutes until puffed
golden brown
and cooked through. Drain on paper towels.
Cook the chicken on a hot barbecue or in an oiled griddle pan for 8-10 minutes on each side until well browned and cooked through.
Serve with mixed salad leaves drizzled with olive oil and lemon juice.
