seville minted chicken
6 chicken roasting joints
salt and freshly ground black pepper
4 tablespoons extra thickcut marmalade preferably homemade chopped
small bunch of fresh mint leaves finely chopped
3 garlic cloves crushed
grated rind and juice of 1 orange
about 25g butter softened
For the sauce:
300ml chicken stock
1 tablespoon plus 1 teaspoon cornflour
salt and freshly ground black pepper
a dash of sugar
Trim off any excess fatty skin from the joints then sprinkle the base of the large roasting trim with some salt and pepper and arrange the chicken joints on top.
Combine the marmalade chopped mint garlic orange rind and butter in a bowl with some additional salt and pepper. Mix well and spread the mixture over the chicken.
Roast in the roasting ovenfor 35 to 40 mins basting once or twice with the pan juices.
Test to make sure the chicken is cooked then remove from the roasting time to a warmed serving dish.
Cover and keep warm while making the sauce.
Skim the surface fat from the pan juices by tilting the pan so the liquid flows to a corner.
Use a tablespoon to take off the surface fat.
Pour a small amount of the measured stock into a bowl and mix with the cornflour.
Pour the remaining stock and the orange juice into the roasting tin combine together with the juices in the pan stir in the cornflour blend.
Bring to the boil in the tin on the floor of the roasting ovenstirring briskly and scraping the base and sides of the tin. Simmer gently for 2 to 3 mins and taste and season with salt and pepper if needed perhaps adding a dash of sugar.
Pour the sauce over the chicken joints and serve immediately.
If you`ve been busy making marmalade now the seville oranges are in season this is a good recipe to use some. If you have no chicken stock to hand use a stock cube. If you have no fresh mint use a teaspoon of bottled mint sauce.
