lamb and bamboo shoot red curry

1 large onion

2 garlic cloves

450g lean boneless lamb

2 tbsp sunflower oil

30 ml

2 level tbsp thai red curry paste

150ml lamb or beef stock

2 tbsp thai fish sauce

2 level tsp soft brown sugar

200g can bamboo shoots drained

1 red pepper

2 level tbsp chopped fresh mint

1 level tbsp chopped fresh basil

25g raw peanuts toasted

basil leaves to garnish

Peel the onion and cut into wedges; peel and finely chop the garlic; cut the lamb into 30mm cubes.

Heat the oil in a large frying pan add the onion and garlic and fry on the simmering plate for 5 minutes.

Transfer to the boiling plate.

Add the lamb and the curry paste and stir fry for 5 minutes.

Add the stock fish sauce and sugar. Bring to the boil.
