rocket prawn and tomato salad

115g rocket

225g cherry tomatoes

175g peeled prawns

For the dressing:

3 tbsp salad oil preferably olive

1 tbsp red wine vinegar

pinch of salt

pinch of sugar

1 tspn dijon mustard

Wash and dry the rocket leaves and tear them in half.

Remove the stalks of the tomatoes and cut them in half.

Put the dressing ingredients into a jar or bowl and shake or whisk until smoothly blended.

Mix the rocket tomatoes and prawns together and pile into two cups or servingdishes.

Pour some of the dressing over each one and refrigerate for approximately half an hour for the flavours to develop before serving.
