Three-Onion Pie with Feta or Goat Cheese

2 tablespoons dry white wine

2 leeks, whites parts only, cut into 1/4 inch rings

2 eggs, beaten

3 tablespoons chopped parsley

1 tablespoon chopped fresh dill weed

1 tablespoon chopped fresh tarragon

4 ounces, feta cheese or dry goat cheese, crumbled

1 plum tomato, thinly sliced crosswise
