sweet rice noodles with coconut and palm sugar
100g rice noodles
300ml coconut milk
65g light palm sugar
1tsp salt
35g dark palm sugar (gula malaka)
35g toasted coconut
Soak the rice noodles in water for an hour.
Combine 250ml of the coconut milk with the light palm sugar and salt and bung to the boil.
When they are bubbling add the rice noodles.
Remove from the heat pour the mixture into individual bowls and leave to cool.
To serve warm the bowl slightly in a microwave and turn out onto a plate.
Coat with a little of the remaining coconut milk grated gula malaka and toasted coconut.
Serves 4
