pork au vin

1lb lean british pork leg cubed

4 rashers back bacon derinded and chopped

3 tablespoons plain flour

1 clove garlic crushed

half pint red wine

3/4 pint stock

1 bouquet garni

20 button onions whole

salt and pepper

8oz button mushrooms whole

Coat the pork in the flour

Place in an ovenproof casserole dish.

Brown the pork in a preheated non stick frying pan.

Add the bacon and garlic and cook for 2 minutes

Stir in the wine stock bouquet garni onions and seasoning.

Cover and cook in a preheated oven for one hour.

Add the mushrooms cover and cook for a further fifteen minutes or until the meat is tender and the sauce has thickened.

Serves 4
