pear and ginger sponge pudding
450g dessert pears peeled cored and sliced
50g soft light brown sugar
1/2 teaspoon ground ginger
2 pieces preserved stem ginger thinly sliced
Sponge:
100g self raising flour
1 teaspoon ground ginger
50g caster sugar
50g shredded suet
1 egg
3 tablespoons milk
Arrange the pear slices in a 1 litre ovenproof dish.
Mix together the sugar and the ground and sliced ginger and sprinkle over the fruit.
To make the sponge sift together the flour and ground ginger and stir in the sugar and suet.
Beat in the egg and milk and beat the mixture until it is smooth.
Spoon over the fruit and level the top.
Bake in a preheated oven (200c/400f/gas6) for 25 minutes until the sponge is firm but springy to the touch. Serve hot with cream or custard.
Serves 4
