pasta and aubergine gratin
2 tbsp olive oil
1 onion peeled and chopped
1 garlic clove peeled and crushed
2 tsp mild paprika
2 tsp tomato pure
350g aubergine roughly chopped
400g can chopped tomatoes
1 tsp sugar
2 small courgettes thinly sliced
salt and freshly ground black pepper
275g dried rigatoni or other pasta shapes
1 tbsp pesto
150g gruyere or mature cheddar cheese grated
25g parmesan cheese freshly grated
Heat the oil in a heavy based ovenproof saucepan on the simmering plate. Add the onion and crushed garlic and fry until softened.
Add the paprika and tomato pure and cook stirring for 30 seconds.
Add the aubergine and cook for a further 2 minutes stirring to coat in the tomato and onion mixture.
Add the tomatoes sugar and 75ml water. Bring to the boil then cover.
