oriental beef with stirfried vegetables and noodle
2 tbsp sunflower or groundnut oil
4 thick pieces of braising beef each weighing about 200g
1 large onion cut into eight pieces
2 whole star anise
1 cinnamon stick broken
4 cloves
125m1oyster sauce
2 tbsp dark soy sauce preferably mushroom soy
2 tbsp freshly chopped coriander to garnish
stir fry:
2 red peppers
2 green peppers
1 onion cut into 8
2 cloves garlic sliced
250g packet thread egg noodles
boiling water
2 tbsp sunflower or groundnut oil
sesame oil
Heat the oil in an ovento hobcasserole on the boiling platethen add the beef and brown it quickly on both sides. Remove the meat from the pan add the onions and cook them quickly until starting to brown.
Return the beef with the spices then add the oyster sauce mixed with sufficient water to cover the meat.
Stir in the soy sauce.
Bring the casserole to the boil then cover and place it on the floor of the simmering oven.
Cook for 3 to 4 hours or longer until very tender.
Prepare all the vegetables for the stir fry cutting them into large evenly sized pieces that will stay crisp during cooking.
Pour boiling water over the noodles in a bowl and leave to stand on the back of the aga for 3 to 4 minutes or as directed stirring once or twice to separate the strands.
Heat a wok or a large frying pan for 5 minutes on the floor of the roasting oventhen transfer it to the boiling plateand add the sunflower oil it should be very hot almost smoking.
Shoot in the vegetables and stir fry for 2 to 3 minutes until just starting to brown.
Drain the noodles thoroughly and toss them in a little sesame oil then add them to the vegetables tossing them together.
Pile the vegetable noodles on to four large warned plates.
Season the beef if necessary then arrange the steaks on top of the noodles.
Quickly strain the sauce from the beef through a sieve and cook it rapidly on the boiling plateto reduce and thicken it slightly if necessary.
Season to taste then spoon a generous amount on to each plate.
Garnish with the chopped coriander and srne immediately.
The longer you cook the beef; the cheaper the cut you can use. For 3 hours in the aga use a braising steak like blade bone or if you plan to leave the beef in the simmering ovenvirtually all day use shin of beef.
