Cranberry Liqueur: Spotykach z zhuravlyny
The berry called for here is the cranberry or bogberry, which is very tart, colorful, and distinctive in taste. The recipe from which this has been adapted called for bruising the berries and marinating the vanilla beans, etc. The following simplified version produces similar results.
2 pounds cranberries (other edible wild berries may be used)
2 pounds sugar
3 cups water
6 cups grain alcohol or (vodka)
1 teaspoon vanilla extract

Wash and sort berries (fruit must be free from rot). Crush in a french mill or processor; retain juice. Discard pips and skin. In a heavy pot, cook sugar and water into a thick syrup. Add juice and bring to boil, then remove from heat. Cool. Add alcohol and vanilla extract. Over very low heat, reheat mixture slowly, stirring constantly, until liquid starts to evaporate; do not allow it to come to a boil. Pour into clean glass bottles or jars, seal, and store in a dark cool place 4 to 4 weeks. Serve chilled in liqueur glasses.
SPICED BREW
2 pints vodka
2 cups sugar
1 tablespoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon cinnamon
1 teaspoon saffron
1/4 teaspoon vanilla
Warm the vodka in a saucepan to dissolve the sugar; add the spices and vanilla. Pour mixture into a glass gallon jar. Cover with several layers of cheesecloth tied tightly with string. Let stand in a cool, dark place for 2 weeks. Filter through a clean cloth, paper, or coffee filter and pour into a cleaned and sterilized jar. Seal and cool. Makes one quart.
MEDIVKA (HONEY LIQUEUR)
1 1/4 cups water
zest of 1 orange or lemon
3 whole cloves
1 teaspoon allspice
1/4 teaspoon nutmeg
1 cup dark honey
2 1/2 to 3 cups vodka
Place the water, orange or lemon zest, cloves, allspice, and nutmeg in a small saucepan. Cover and simmer for 10 to 15 minutes. Strain the water through a clean cotton cloth into another pot and add the honey. Bring to a simmer and skim the foam from the surface. Gently warm the vodka, add the honey mixture, and combine well. Cool, pour into sterile jars and seal. Makes about 5 1/2 cups.
CHERRY VODKA:
4 1/2 cups vodka
zest of two oranges
10 whole cloves
1 1/4 cups cherry syrup
Pour vodka into an enamel bowl; metal reacts negatively with the vodka. Add orange zest and cloves. Cover bowl and keep at room temperature for two weeks. Strain vodka mixture through a clean cotton cloth or coffee filter, add the cherry syrup, and stir well. Store in sealed jars. Keeps for up to six months. Makes about 6 cups.
HOT PUNCH:
4 1/2 cups red table wine
1/2 cup dark rum
1 1/2 cups sugar
1 cinnamon stick
12 whole cloves
Place wine, rum, sugar, cinnamon stick, and cloves in an enamel pot. Simmer gently until sugar dissolves. Strain and pour into glasses. Serves six.
There are three rules to drinking vodka straight.
1. Never drink alone. To sit by yourself is seen as unnatural and anti-social. Even drunkards will band together in small groups.
2. Never drink without eating something immediately afterwards.
3. Never sip your vodka, or add ice or tonic.
