yoghurt and cucumber salad

mediterranean

225g thick plain low fat yoghurt

10cm cucumber peeled and grated

1 tbspn olive oil

1 tspn wine vinegar

1 clove garlid peeled and crushed

1 tbspn finely chopped fresh mint plus more leaves to garnish

salt

Whisk the oil vinegar and garlic in a bowl.

Add yoghurt and salt and beat until smooth.

Squeeze the cucumber with your hands to remove excess moisture then mix it into the sauce with the mint.

Cover and refrigerate.

Serve lightly chilled garnished with mint.

This is the sauce found all over the Eastern Mediterranean. Cacik to the Turks or tzatziki to the Greeks it can be served with vegetable and oil based dishes with raw vegetables grilled fish or meat roasts and salads.
