a handful each of dandelion rocket trevise or radicchio red or white chicory or young spinach lambs lettuce
Oil and lemon dressing (qv)
Wash and pick over the rocket and dandelion leaves.
Separate the trevise or radicchio and chicory leaves from their stalks and check for dirt.
Mix all the leaves together in a bowl and toss with the dressing.
In December and lanuary before the flowers form on the dandelion pick the small centre leaves from wild plants.
