500g digestive biscuits crushed
220g butter softened
150g sugar
300g walnuts coarsely crushed
4 tablespoons raisins
1 teaspoon cardamom powder
1/2 teaspoon allspice powder
Single cream to pour over
Mix the biscuits and butter and pat into flat discs 3cm in diameter.
Chill to set.
Make a single string syrup (qv Pista Kichori step 3) with the sugar and a little water.
Add the walnuts and raisins.
Cook on a low heat until the mixture is well blended.
Then add the spices.
Cool the mixture slightly and place a little on top of each chilled biscuit disc.
Serve with single cream poured on top.
This recipe is a mixture of East and West. indian cookery is full of such combinations as many indian chefs are ingenious at successfully experimenting with European or Far Eastern flavours and giving them a subtle indian turn.
