tomato garic and summer herb dressing
1 pound ripe tomatoes skinned seeded and finely diced
2 garlic cloves minced
2 tablespoons balsamic vinegar
4 tablespoons extra virgin olive oil
6 large basil leaves finely shredded
3 tablespoons chopped mixed fresh herbs e.g. oregano dill chervil chives parsley and mint
salt and freshly ground black pepper
Place the tomatoes in a bowl with the garlic balsamic vinegar and olive oil.
Stir well.
Add the shredded basil and mixed herbs to the tomato mixture.
Stir in salt and pepper to taste.
Mix thoroughly to combine well.
Let stand for at least 30 minutes before using to allow the flavors to develop and mingle.
Try this dressing with pasta rice and grain salads: with cheeses; or with gulled lamb chicken or fish. It also makes a tasty dressing for summer vegetable salads based on avocado asparagus or beans.
Makes about 1 1/2 cup
