tagliolini con tonno

1 x 198g can tuna fish

1 clove garlic crushed

2 tablespoons chopped parsley

250g ripe tomatoes skinned and chopped

150ml chicken stock

salt and pepper

350g tagliolini

Drain the oil from the tuna into a pan add the garlic and heat gently for 2 minutes.

Add the parsley and tomatoes and cook until the tomatoes begin to soften.

Flake the tuna and add to the pan with the stock and salt and pepper to taste.

Simmer while cooking the pasta.

Cook the pasta in boiling salted water until al dente; drain well.

Turn into a warmed serving dish.

Add the sauce toss and serve immediately.

Serves 4
