spicy peanut dressing
2 tablespoons creamed coconut
4 tablespoons milk
1/2 small onion chopped
1 garlic clove minced
4 tablespoons smooth peanut butter 1 teaspoon soft brown sugar
7 teaspoons soy sauce
1/2 teaspoon ground cumin 1/2 teaspoon chili powder
salt and freshly ground black pepper
Chop the creamed coconut and place in a small pan with the milk.
Heat gently for about 2 minutes stirring constantly until the coconut melts and forms a paste with the milk. Transfer the coconut mixture to a blender or food processor and add all the remaining ingredients.
Process until smooth then transfer into a small bowl.
Cover and set aside until required.
Make this rich spicy dressing in advance to allow the flavors to develop before using. It is the perfect dressing for the Indonesian vegetable salad Gado Gado but is also delicious with grilled chicken fish. or shellfish.
Makes about 1/2 cup
