12 pork spare ribss lean

4 level tablespoons clear honey

3 tablespoons soy sauce

3 tablespoons tomato ketchup

Tabasco sauce

smaIl clove garlic

mustard powder

paprika

salt and black pepper

juice small orange

4 tablespoons wine vinegar

Wipe meat and separate into singleribs

Grill 1015 mins on high grill until brown turning several times

Arrange in single layers in a large roasting tin and pour over pan juice

Put honey soy sauce ketchup and a few drops tabasco into bowl

Peel and crush garlic and add

Season to taste with mustard paprikas salt and freshly ground pepper

Add orange juice and wine vinegar

Mix and pour over spare ribs

Cook uncovered in centre of oven 350 F for 30 mins

Serve piping hot

* Ask butcher for thin end of ribs not chunky chops
