spaghetti alla carbonara

450g spaghetti

40g butter

2 cloves garlic peeled

75 g streaky bacon finely diced

150 ml single cream

3 eggs

3 egg yolks

1 tablespoon chopped parsley

50g grated Parmesan cheese

salt black pepper

Cook the spaghetti in plenty of boiling salted water for 10 to 12 minutes until tender.

Melt the butter in a pan fry the garlic cloves for 3 minutes then remove them from the pan.

Add the bacon and fry for 5 minutes.

Stir in the cream bring to the boil cover and remove from the heat.

Beat the eggs and egg yolks in a bowl with the parsley and grated cheese.

Drain the spaghetti.

Add to the hot bacon and cream mixture.

Pour the beaten eggs over it and mix all well together.

Season to taste with salt.

Place on individual dishes and grind black pepper over each serving.
