40 ml pint tomato juice

51g butter

2 tablespoons chopped parsley

1 tablespoon chopped dill

4 tablespoons chopped cress

1 teaspoon dried tarragon

1 shallot or small onion grated

1 tablespoon lemon juice

salt cayenne

Put the tomato juice in a pan and cook uncovered over a moderate heat for about 25 minutes until it has reduced to a syrupy consistency.

Cream the butter in a bowl and mix in the chopped fresh herbs dried tarragon grated shallot or onion and the lemon juice.

Add the herb butter to the reduced tomato juice beat the sauce well with a wire whisk and season to taste with salt and cayenne pepper.

Serve with grilled or fried meat.
