shrimp and feta cheese salad
8 ounces yoked shrimp chopped
2 small zucchini coarsely chopped
2 plum tomatoes coarsely chopped
1/2 cup (4 ounces) crumbled feta cheese
2 tablespoons fresh lemon juice
3 tablespoons olive oil
1 teaspoon dried oregano
1 cup chopped fresh parsley
salt and freshly ground pepper to taste
6 mini pitta breads
In a medium bowl combine all ingredients except pitta bread.
Taste and adjust seasoning.
Make a slit in one side of each pitta bread and fill.
Crumbled late cheese brings tang and texture to this colourful tumble of shrimp tomatoes and fresh chopped zucchini.
