red wine vinaigrette
4 tbsp red wine vinegar
1/2 tsp salt
1/2 tsp sugar
50 ml olive oil
175 ml sunflower oil
Mix together the vinegar salt and sugar until the salt and sugar are thoroughly dissolved. Add the olive oil and process or shake again then add the sunflower oil.
Make sure the dressing is thoroughly blended.
This is the great southern Frenchstyle dressing wonderful on thick slices of sunripened tomatoes but I find this version nicest with green salads particularly those made with the slightly bitter lettuces like frisee or curly endive. As with all vinaigrettes the order of mixing is very important as the sugar and salt will not dissolve properly once the oil is added. You can use all olive oil or all sunflower oil if you choose. If using on tomatoes or other solid vegetables an hour or so marinating in the dressing is a great improvement. If using on greens dress within 10 minutes of eating.
