prawns in garlic butter
1 medium onion peeled and finely chopped
100g unsalted butter
3 garlic cloves peeled and finely chopped
350g peeled prawns (thawed if frozen)
2 tablespoons chopped fresh parsley
pinch of salt
freshly ground black pepper
pinch of cayenne
l/4 teaspoon lemon
juice 1 lemon quartered to garnish
hot crusty wholemeal rolls to serve
Fry the onion in the butter over moderate heat for 4 minutes stirring once or twice.
Add the garlic and prawns stir well and lower the heat.
Cook over low heat for 5 minutes stirring occasionally.
Stir in half the parsley and add salt pepper cayenne and lemon juice.
Serve hot garnished with the remaining parsley and the lemon wedges.
Serve with hot crusty rolls.
Serves 4
