potatoes baked in stock

500g potatoes any sort

a large onion

2 tablespoons olive oil

2 bay leaves

a large knob of butter

400ml vegetable stock

Peel and thinly slice the potatoes.

Peel the onion and cut into thin slices then fry in the olive oil in a deep ovenproof pan over a low heat till soft.

Put the potato slices in with the onions in layers.

Add the bay leaves and dot the butter over the top.

Season with salt and freshly ground pepper; this dish requires both.

Pour in the stock which should pretty much cover the potatoes.

If it does not then top up with either more stock or a little water.

Cover tightly with a lid and bake for an hour in a hot oven at 190
