pistachio ice cream

5 egg yolks
75g caster sugar
500ml milk
225g pistachio paste
100ml double cream
Whisk the egg yolks with the sugar in a bowl until lighty creamed.
Bring the milk to the boil in a heavy saucepan and incorporate the pistachio paste.
Leave to infuse for as long as possible.
Pour the milk mixture over the eggs and sugar whisking continuously.
Return to the heat and cook slowly stirring continuously with a wooden spoon until the custard will coat the back of the spoon.
Pass through a fine sieve and leave to become completely cold.
When cold add the cream.
Turn in an ice cream machine.
The colour and flavour of this ice cream is fairly elusive. You can make the paste by shelling and skinning 800g of pistachios and then blending them but we use a readymade pistachio paste which is easier although quite difficult to obtain. This ice cream goes with any kind of chocolate dessert to perfection.
