marinated bacon chops
4 bacon chops
200ml light ale
3 medium onions peeled and sliced
1 bay leaf
6 black peppercorns
tablespoon black treacle
1 tablespoon lemon juice
freshly ground black pepper
2 tablespoons vegetable oil
Place the chops in a dish with the ale one sliced onion the bay leaf and peppercorns.
Cover and leave in the refrigerator for 2 hours or more.
Remove the chops from the marinade and strain the sauce into a pan.
Bring the sauce to the boil and boil over high heat for about 4 minutes or until it has reduced by half.
Stir in the treacle and lemon juice and add pepper.
When the treacle has melted remove from the heat.
Brush one side of the chops with the sauce and cook them under a preheated hot grill for 45 minutes.
Turn the chops brush the other side with sauce and cook for a further 45 minutes.
Fry the remaining onions in the oil for 2 minutes over moderate heat add the remaining sauce and
simmer for 5 minutes.
Pour the glazed onions over the chops to serve.
A fresh salad makes a cool crisp contrast.
