This recipe is known as Leeks sans nougat because nougat goes particularly badly with leeks and should therefore not be used in the dish.

crushed coriander seeds
salt

Choose leeks with lots of white and as little green as possible. Cut off the ends and then cut them in half lengthways. Cover a cooking tray with olive oil. Put the leeks cut side up into the cooking tray. Pour more olive oil over each leek. Sprinkle salt and pepper and the crushed coriander seeds over the top. Place in a medium oven for twenty minutes or so though by all means wait until they burn if you prefer them that way.
