laverbread croquettes
230g cooked mashed potato
60g laverbread
1 tablespoon oil
30g mixture of finely chopped leeks carrots and celery or 80g finely diced bacon
Salt and pepper
To coat
A little flour
1 egg size 3 beaten
About 30g dried breadcrumbs
Bacon fat or oil for shallow frying
Mix the potato and laverbread.
Heat the oil add the vegetables or bacon taste then leave to chill for 1 hour.
When the mixture is firm enough to handle shape into six sausage shaped croquettes.
Roll the croquettes in the flour then dip in beaten egg and liberally coat in dried breadcrumbs.
Chill until ready to cook then shallow fry in hot bacon fat or oil until golden on all sides.
Drain the croquettes thoroughly on kitchen paper and serve immediately.
Makes about 6
